Etienne Daulny owns prime parcels scattered across the Sancerre AOC totalling about 16 hectares. The soils of these parcels differ greatly and help to provide complexity and Etienne combines these plots skilfully to create his stunning Sancerre. Daulny favours stainless steel tanks for fermentation and inhibits malolactic fermentation, but then ages the wine on fine lees. The result is a clean and bright, very appealing, Sauvignon with great texture.
