The Syrah undergoes a traditional style fermentation in concrete Nomblot tanks, incorporating 35%- 40% whole bunches which are foot crushed. Spontaneous, natural fermentation occurs with minimal punch down and punch over’s. The wine spends 12 to 14 days on the skins before being racked into older French oak for 14 months maturation. Uplifting bright sweet red plum fruit with layers of perfumed violets and red berry notes dominate the nose followed by subtle notes of fynbos, white pepper, cinnamon, liquorice and aniseed spice The palate shows a lovely freshness and purity of red fruit with a fine, spicy tannin structure.
